YOU WILL NEED1 LB UNCOOKED BONELESS SKINLESS CHICKEN BREASTS3 TBSP VEGETABLE OIL2 1/4 CUPS HOT WATER2 EGGS1. COOKCut chicken into 1/4- to 1/2-inch pieces. Heat 2 Tbsp oil in 10- or 12-inch skillet over medium-high heat. Carefully add chicken; cook 3 minutes, stirring often.2. STIRStir in hot water, Seasoning Mix and Rice. Heat to boiling.3. SIMMERReduce heat. Cover; simmer about 20 minutes, stirring once, until liquid is mostly absorbed. If not absorbed, increase heat to medium and cook uncovered 2 minutes longer.4. SCRAMBLEIncrease heat to medium. Push rice to side of skillet. Heat 1 Tbsp oil in other side. Scramble eggs in oil until cooked; remove from heat. Stir eggs into rice. Refrigerate leftovers.
